Recipe for Chicken and Dumplings

1 pound of chicken without bones or skin, cut into small pieces.
1 spoon of olive oil
1 onion, chopped
2 carrots, cut into thin pieces.
2 pieces of celery, cut into small pieces
4 cups of chicken broth
Add salt and pepper according to your preference.
1/2 teaspoon of dried thyme (you can choose not to use it).
1/2 teaspoon of dried parsley, you can add it if you want.

Make the soup broth.

Warm up the oil. In a big pot, warm 1 tablespoon of olive oil on medium heat.
Cook Vegetables in a Pan: Put the chopped onion, cut carrots, and celery. Cook the vegetables in a pan for 5-7 minutes, stirring occasionally, until they become soft.
Make chicken. Put the diced chicken in the pan and cook for 5 minutes, stirring often, until it turns slightly brown.
Include broth and seasonings. Add the 4 cups of chicken broth. Sprinkle salt and pepper, and if desired, add some thyme and parsley.
Cook slowly over low heat. Heat the mixture gently and let it simmer for 15 minutes so the flavors can blend together.

Prepare the dumplings.
Mix the dry ingredients together. In a bowl, mix 2 cups of regular flour, 1 teaspoon of salt, 1 tablespoon of baking powder, and 1/4 teaspoon of black pepper (optional).
Combine the liquid ingredients: In a small bowl, mix one beaten egg and two tablespoons of melted butter.
Prepare the batter: Slowly pour the liquid mixture into the dry ingredients while stirring softly. Pour the milk slowly while stirring until a thick batter forms. Be cautious not to mix too much.
Make the dumplings.
Add dumplings to the broth. Using a spoon, place small amounts of batter into the hot soup. Make sure there is plenty of room between each dumpling so they can get bigger.
Cook the dumplings by steaming them. Put a lid on the pot and cook for 15-20 minutes. Do not open the lid while cooking the dumplings because they need steam to cook properly.
