In a big bowl, mix 3 1/2 cups of flour and the salt.
Mix the ingredients together.
Create a hole in the middle of the dry ingredients. Add the yeast mixture and softened butter to the mixture, along with honey or olive oil if desired. Stir with a wooden spoon or use your hands until the dough begins to form.
Work the dough by kneading it.
Put the dough on a surface with flour and knead it for 5-7 minutes until it is soft and stretchy. If the dough is too sticky, gradually add more flour.

Press the dough that has risen to let the air out. Place it on a surface with flour and form it into a loaf. You can put the formed dough in a greased 9×5-inch bread pan or shape it into a round loaf and place it on a baking sheet lined with parchment paper.

Place a wet cloth or plastic wrap over the dough and allow it to rise for 30 more minutes, or until it doubles in size once more.
