Puff Pastry Apple Slices

Preheat oven to 200°C (392°F) with top and bottom heat.
Line a baking tray with baking paper.
In a small bowl, mix together 100 g sugar and 1 tsp cinnamon.
Whisk 1 egg in a small bowl for the egg wash.
Peel and core 2 to 3 large apples. Slice into 1 cm thick rings.
Coat each apple slice in the cinnamon-sugar mixture, covering both sides.

Roll out 2 rolls of puff pastry and cut into 1-2 cm wide strips.

Wrap the puff pastry strips around the apple slices. Use 2 strips per slice.
Place wrapped apple slices on the baking tray. Brush with egg wash.
Sprinkle any remaining cinnamon-sugar mixture over the top.
Bake for 20 minutes or until the puff pastry is golden brown.
Let cool on a rack, then dust with powdered sugar if desired.

Serve warm with a cup of tea or coffee. These apple slices also make a great breakfast treat or dessert alongside a scoop of vanilla ice cream.
