Light and Fluffy Omelet

Step 1

Beat eggs until soft peaks form.

Step 2

Whisk egg whites until stiff peaks, then fold into yolks.

Step 3

Heat oil in a non-stick pan over low heat.

Step 4

Pour in egg mixture and cover. Cook for about 3 minutes.

Step 5

When bubbles form, remove lid.

Step 6

Lift omelet, add butter underneath, and sprinkle with cheese and green onions if desired.

Step 7

Transfer to a plate, fold in half, and serve immediately.
