Instructions
- Prepare the Dough:
- In a bowl, activate the yeast by mixing it with warm milk and sugar.
- In a separate bowl, combine flour and salt.
- Add melted butter, the egg, and the yeast mixture to the flour.
- Knead until smooth and elastic, then let it rise for 1 hour.
- Prepare the Cheese Filling:
- In a bowl, mix together ricotta, feta, parmesan, egg, and parsley (if using).
- Season with salt and pepper to taste.
- Assemble the Rolls:
- Divide the dough into 20-24 pieces.
- Flatten each piece and place a spoonful of the cheese mixture in the center.
- Seal the edges to form balls and place them seam-side down in a greased pan.
- Second Rise:
- Allow the rolls to rise for another 30-45 minutes.
- Bake the Rolls:
- Preheat the oven to 375°F (190°C).
- Brush the rolls with melted butter and sprinkle with grated parmesan.
- Bake for 20-25 minutes, or until golden brown.
- Serve:
- Let the rolls cool slightly before enjoying them warm!
